With its vibrant jewel tones, braised red cabbage glows with good health. An excellent side for braised meats.


Ingredients
2 tbsp
vegetable oil
1 small
onion, halved then sliced
1 small
red cabbage, cut in half, then thinly sliced
1 large
apple, cored and coarsely chopped
14 cup
brown sugar
14 cup
raspberry vinegar, or balsamic vinegar
34 cup
water
3
juniper berries
1
bay leaf

Preparation
  1. Heat oil in a Multipurpose Pot over medium-high heat. Add onions and cabbage. Cook for 3 minutes, stirring continuously.
  2. Add apple, sugar, raspberry vinegar, water, juniper berries and bay leaf.
  3. Reduce heat to low, cover with a tight fitting lid and simmer for 25 minutes. Remove juniper berries and bay leaf before serving.
Tips

Bump up the flavour by adding 1 or 2 cinnamon sticks while braising.
